
My most recent commission, a 60th birthday cake with four layers of coffee and walnut sponge finished with coffee mousseline. I had recently bought Peggy Porschen's "Romantic Cakes" and liked her 3D butterflies so my brief of "do what you like" was ideal to give it a whirl. I thought it would be nice to give a step by step in pictures.
From left to right - trimmed and coated cake ready to cover; royal icing butterfly outlines done with no2 nozzle; flooded butterflies drying under a 100 watt lamp to make the icing shiny
